The perfect box for those on an ancestral style diet, or just for those who wish to embrace the nose to tail approach and enjoy the most nutrient dense parts of the animal.
- 2 x 250g suet (organ fat)
- Suet is traditionally used for pastry making. It can also be used as a fat for cooking, or rendered to make tallow.
- 2 x 250g beef liver
- The king of offal, liver is a fantastic source of vitamins, minerals, protein and amino acids. Try it braised with bacon and onions, in a pâté or in an Asian style stir fry.
- A beef heart (approx. 1.5kg) or a beef tongue (approx. 1.2kg)
- Tongue is a high protein, lower fat and high collagen option, with a distinct firm yet tender texture. Prized in culinary circles around the world it can be used in everything from tacos to salads. Braising is the traditional cooking method (low and slow is best with connective tissues).
- A nutritional powerhouse, heart is packed with B vitamins, iron, selenium and zinc. Heart can be cooked and finely sliced, or minced and added to minced beef recipes such as bolognese or burgers to add a concentrated extra dose of nutrition.
- 500g Oxtail
- With all the collagen and marrow rich benefits of bones, along with the melting texture of the meat, this is a highly under rated cut. Stew, soup, ragu – all sorts of recipes would work with ox tail.
- 1 x beef cheek (approx. 400g)
- One of our personal favourites, slowly braised beef cheeks provide the kind of unctuous, melt in the mouth dish that is delicious, nutritious and so easy to prepare.
- 2 x 250g kidney
- Nutrient dense and rich in omega 3 fatty acids, as well as high in protein. Great for traditional breakfasts or in a pie.
This product will arrive vacuum packed and frozen as offal has a very short shelf life.
